Flashing a new ROM is one of the most fun parts of having root.

There are many many ROMs out there for the Eris, and to try one other than the one you have running you do this:

1-Find a new ROM that you think will work for you and save it.
*I have a ROMs folder on my desktop to keep track, I would    recomend this.
2-Move the ROM to the root of your SD card.
   *Plug phone into computer
   *Put into disk drive mode
*Move ROM onto the root of the SD card (Not in any folders)
3-Back up your current ROM.
4-Boot into recovery
*Method 1 (recomended):Go to the Market and download QuickBoot.
      -Open QuickBoot and tap 'Recovery
*Method 2: Power off phone, then hold Vol-Up+End
5- Once in Recovery you should see this screen:

6- From this screen select 'Wipe'
   * Do a data/factory reset.
   * When it's done go back to the main menu (Vol-down)
7- Now go to 'Flash zip from sdcard'
   * Find your ROM and select it
-If your ROM requires flashing of multiple .zip files, do that now.
8-Go back to the main menu and select 'Reboot system now'
   * It will take a while to boot the first time.
And you now a new custom ROM.

During the root process on my phone I was assisted by tereg (and Ripley  Grin)  from over at XDA, who also recommended that you wipe the Dalvik cache as well when changing ROMs. You might want to verify that information as to why it would be necessary (or not).

From our friend Andrizoid (at Phandroid) - "dalvik cache is a program cache area for the program dalvik. Dalvik is a java based virtual machine that is the bases for running your programs (the ones that have the .apk extension). In order to make access times faster (because there's not JIT (just in time) compiler installed by default), the dalvik-cache is the result of dalvik doing a optimization of the running program. Sounds confusing. It's similar to the prefetch files in Windows. "

I don't do it regularly and I never notice a difference in signal/roaming when I do call. So I would have to say that you don't have to.

Well if you aren't rooted you dont need to worry about this just yet.
You should poke around here http://www.droid-eris.com/all-things-root/(tutorial)-how-to-root-your-leaked-droid-eris/ for a while. And ask any questions.
