I am trying to do a backup before I root, but I get to the recovery screen use the volume down to highlight recovery push the power button like it says to do on the screen and I get a screen with a pic of a phone and a red triangle with an exclamation mark. Is there something I'm doing wrong or am I missing somthing?

Nand Backup is only available after rooting. You can and should backup your apps and SD card content prior to rooting. AppBrain and Astro File Manager  can be used to backup apps. You should also consider copying your entire SD card to your computer as a precaution. Once rooted, Nand Backup and Titanium backup can do complete backups of your phone.
